  1. On many occasions, archeologists have found thousands of years old honey that had still not gone bad.<\/span><\/li>\n
  2. And there are many reasons why honey can go on forever without spoiling.<\/span><\/li>\n
  3. Reason 1:<\/span><\/strong>\u00a0Honey is hygroscopic (tends to absorb moisture from the air).\u00a0<\/span><\/li>\n
  4. Because of this property, honey dehydrates the bacteria by drawing water out of them.<\/span><\/li>\n
  5. Reason 2:\u00a0<\/span><\/strong>Honey is 80% sugar.<\/span><\/li>\n
  6. Honey is mostly sugar and water, but the quantity of water is significantly less.<\/span><\/li>\n
  7. And most bacteria or microorganisms need moisture to survive.<\/span><\/li>\n
  8. E.g., you don\u2019t need to refrigerate dry, uncooked rice but once cooked, the rice must be kept in the fridge\u00a0<\/span>within a few hours<\/span><\/a>, or it would spoil.<\/span><\/li>\n
  9. So, honey doesn\u2019t provide a supportive environment for bacteria to survive and reproduce.<\/span><\/li>\n
  10. Reason 3:<\/span><\/strong>\u00a0Honey is highly acidic (it has a pH between 3 and 4.5).\u00a0<\/span><\/li>\n
  11. pH is short for potential of Hydrogen \u2014 A pH number measures, from 0 to 14, how acidic or alkaline something is \u2014 anything above 7 is alkaline, and anything below 7 is acidic.<\/span><\/li>\n
  12. Most {tooltip}bacteria{end-text}Some survive in very acid conditions also and can survive pH of 1 as well. These are called acidophilus{end-tooltip} survive and thrive in pH of 6.5 to 7 (that is why bacteria love moisture \u2014 water has a pH of 7).<\/span><\/li>\n
  13. Reason 4:<\/span><\/strong>\u00a0Honey contains hydrogen peroxide (we use this stuff to heal wounds).<\/span><\/li>\n
  14. Honey starts out as nectar<\/span><\/a> that bees suck from flowers and store in a special honey stomach (bees have two stomachs), which has special enzymes that start converting the nectar into honey.<\/span><\/li>\n
  15. When at the beehive, the bee vomits this enzyme-treated nectar into another bee\u2019s mouth, which then vomits into the other bee\u2019s mouth, and so on.<\/span><\/li>\n
  16. This process breaks down the nectar into two by-products, one of which is Hydrogen Peroxide, which is considered the perfect barrier against infection for wounds.
